Job Description

What will I be doingA Sous Chef for Conrad Dubai will be responsible for directing the kitchen team in providing consistency and quality of food ensuring HACCP standards are followed in order to achieve the maximum level of guest satisfaction and organizational profitability. Additionally the Sous Chef will be required to conduct their below duties at the highest standards;Act as a coach and mentor; manage performance by setting objectives, deliver performance reviews, provide ongoing performance feedback and administer corrective action when neededSchedule, train, supervise and participate in all team activitiesAbility to supervise, lead, organize and train a large number of team membersConduct regular department walk-throughs and random food tastings to ensure standards and quality are followedHave an extensive knowledge of all the menu and items including basic ingredients, methods of preparation and presentation styleAll sections of the kitchen are to be managed and brought up to brand standard across all disciplinesActively creating new standards, recipes, descriptions, presentationA Sous Chef must have and show a pro‑active behavior in problem solvingAssist the Executive Chef/Executive Sous Chef or lead all culinary aspects of food tastings, photo shooting promotions of their respective outletAssist the Executive Chef/Executive Sous Chef with creating, planning, cost calculating recipe and implementation of new menus based on current food and market trends with the goal to drive up‑sales and other revenue generating initiatives and guest satisfaction on a regular basisEnsure all equipment is used in the right way and maintain if it’s not up to required working standard take the necessary steps and actionsEnsure compliance with Conrad brand standardsEnsure secure and correct usages of equipment and supplies by all team membersEnsure proper segregation of food waste and other waste as per Hilton sustainability programCreating unforgettable dining experiences for our guests exceeding expectations with genuine Hilton hospitalityEOE/AA/Disabled/VeteransWhat are we looking forPrevious experience as Sous Chef or strong Junior Sous Chef experience in Mediterranean/Greek CuisinePassion for producing high quality food and knowledge of current food trendsExcellent planning and organizing skillsAbility to multi‑task and meet deadlinesStrong supervisory skillsPositive attitudeVery good communication and interpersonal skillsAbility to work under pressureWhat will it be like to work for Conrad Hotels & ResortsConrad Hotels & Resorts combines contemporary design sophisticated amenities and personalized service.
