This is a critical operational role focused on execution, accountability, and measurable results — not supervision only.The Head Butcher will be fully responsible for setting, implementing, and enforcing systems that ensure yield optimization, cost control, waste reduction, and consistent quality across all protein production activities.Key ResponsibilitiesDevelopment, implementation, and enforcement of butchery SOPs and cutting standardsProtein yield optimization, cost control, and waste reduction strategiesDaily monitoring of yield performance and variance analysisPortion control accuracy and prevention of over-portioningCentral Kitchen protein operations, workflow efficiency, and production planningFood safety compliance including HACCP and cold chain managementTraceability and proper segregation of all protein categoriesDocumentation, reporting, and daily reconciliation of received, processed, issued, and wasted quantitiesTeam leadership, training, and enforcement of discipline and productivityDriving operational results through execution, not supervision onlyFull AccountabilityProtein cost performance and yield resultsWaste control within approved limitsImplementation (not documentation only)Enforcement of cutting standards and SOPsMeasurable improvements within defined timelinesRequired QualificationsMinimum 5–8 years of experience in butchery or meat processingMinimum 2–3 years in a supervisory or leadership roleProven experience in high-volume production or central kitchensDeboning and advanced butchery techniquesYield calculation and cost controlWaste reduction and trim utilizationHACCP and food safety standardsDemonstrated ability to lead teams and drive disciplineExperience delivering measurable results in structured operations#J-18808-Ljbffr
